-With a bit of practice, you can send the guy over the wall (for disappointing points, but it's still fun to watch.)
-You can get him stuck in between the ramps, flailing helplessly as the truck grinds painfully over him. This one's good for big points, in addition to being fun to watch.
-You can also stick him partway into a ramp, resulting (somehow) in him being shot into the air. Follow up with a midair truck collision, stir, enjoy.
This is such a bizzarely fun game. I downloaded "stair dismount" too, and it wasn't quite as dynamically fun as this one... though I did find that if you give the stair guy a light, 1 powerbar uppercut with the angles being precicely 360 heading and 90 pitch, you can make him almost harmlessly sit down on the top step, inflicting merely 3 points of damage, one to each foot and a third that is unaccounted for.
You can also make him fall back and spread his legs like a $5 whore if you put the heading at approx 180.20, pitch 0, and push him in the neck with 1 point in the power bar.

The trick is getting the poor guy stuck in the windshield, so he squirms around with his head slightly separated from his body. It does massive damage. :)
One of my current favorites is a very low scoring maneuver that has the man fall down right behind the ramp, the truck jumps it, hits the wall and then on the rebound, the lower corner of the truck quite cleanily decapitates him, pulling his head faaaaar off of his shoulders. Too bad it doesn't stay off, or give you massive points. For a move that rips the head off his body it sure doesn't seem to injure the head area very much.
Put him in position 4 with the windshield on, have a ramp there, and put the truck's speed to pretty high. It takes some fine-tuning, but that way often works.
It's the essence of GTA: Vice City.

this is like the computer version of the way I played legos when I was little. this is awesome.
